Behind a discreet Hudson Street facade — look for the neon psychic sign, and sometimes the psychic herself — Employees Only has been one of New York's defining cocktail bars since 2004. It was founded by working bartenders, and it shows: the drinks are precise without being precious, the white-jacketed staff run the room like a well-drilled kitchen, and the art deco interior glows like the inside of a pocket watch.
Unlike many bars of its generation, it is also a genuine late-night restaurant, with a proper menu served until the small hours. Come before nine for a civilized drink, or after midnight to see the industry crowd arrive and the room hit its real stride.
